They named the restaurant Sabor a MI after a romantic bolero song: Sabor a Mi byTrio Los Panchos and Eydie Gormé popularized worldwide.
The chorus in the song is: A thousand years may pass, I don't know if there's love in eternity, but in your lips you'll always taste me. Liz and Martha liked the pun that implied someone might taste SABOR A MI's meal forever.
Elizabeth acquired the roots and flavors of Traditional Mexican Cuisine while helping at her mother's Fonda in Mexico as a child. After, her experiences and years working in hotels like Sheraton, Marriott, Courtyard, Golf clubs, and other restaurants have given her the knowledge and confidence to create a Mexican Cuisine Menu with ingredients and seasonings that have made Mexican food famous worldwide.
Mexico has 30 states, each with its own cuisine and simple components like corn, beans, cactus, magueys, chiles, prickly pears, pitaya, cacao, spices, and herbs.
Chef Hart has used her ancestors' humble ingredients and spices to create Sabor a Mi's menu, adding her own flair and innovation.
Sopes, Enchiladas, Flautas, Menudo, Birria, Mole Poblano, and Tamales from Jalisco in central Mexico. Mixiotes, Molletes, Huaraches, and other dishes with lamb from Mexico State. Carne Asada with flour tortillas from Sonora. Yucatan offers Cochinita Pibil, Panuchos, Habanero chiles. Plantain-leaf tamales from Oaxaca as well as wonderful Moles, Tlayudas, and of course the fashionable Mezcal.
